3 Tablespoons Butter Or Margarine
1 Fresh Large Pineapple Core Out And Spiraled
1 Teaspoon Course Salt
1/2 Teaspoon Ground Black Pepper [optional]
1 3/4 Cups Cold Water
1/2 Cup Brown Sugar
1/4 Teaspoon Fresh Ground Nutmeg
1/4 Cup Pineapple Juice
1 Tablespoon Fresh Shredded Lemon Peel
1 Tablespoon Fresh Shredded Lime Peel [optional]

Cooking Directions:
In a large skillet melt butter or margarine over medium heat, Cook rice while stirring for 4-5 minutes. Add pineapple juice, salt and water to the skillet and bring to a boil, reduce heat to a low-heat simmer cover and cook 15-20 minutes. Stir in sugar, lemon zest and nutmeg. Pour all of contents in to a large baking dish and top with full slices of pineapples with core out. Cover with foil and bake at 375 degrees for about 25 minutes. Serve the dish warm.
