1 Large Onion Chopped
1 Clove Garlic Minced
1 Package Mixed Vegetables
1 Cup Fresh Diced Tomatoes
1 3/4 Cups Mixed Long Grain Rice
2 Cups Cream Corn

1/2 Cup Celery Chopped [optional]
2 Large Carrots Sliced [optional]

Cooking Directions:
In a Large 3-5 quart saucepan brown beef with onions and minced garlic. Drain off liquid and add the rest of the ingredients except half cheese, bring to a boil. Reduce heat to low-medium heat and cover simmer for 30-40 minutes. Serve with toasted garlic bread or in a bread bowl. Goes well with white wine.
