1 Cup Scallion Chopped
3/4 Cup Bell Peppers Cubed
3 Tablespoon Extra Virgin Olive Oil
1 Cup Long Grain White Rice
1/4 Cup Fresh Sniped Parsley
3 Cups Chicken Broth

Cooking Directions:
In a large skillet or saucepan heat your extra virgin olive oil on medium-high heat, once hot add bell peppers, onions and garlic. Cook till golden brown, Mix in the rice, chicken broth, parsley, salt, pepper and jalapenos. Combine ingredients well. Pour rice mixture into a large 2-3 quart baking dish. Preheat oven to 350 degrees and bake covered for 40-45 minutes. Fluff with a fork serve with green pasta. This rice dish is best served and eaten with chopsticks.
