4 Bacon Slices Diced
2 Large Onions Chopped
1 Scallion Chopped
1 Cup Sliced Okra
1 Clove Garlic Minced
1 Cup Cubed Cooke Ham
1 Cup Fresh Diced Tomatoes
1 Teaspoon Ground Thyme
Dash Of Cayenne Pepper
1 Long Grain Rice Uncooked
2 Cups Cold Water

Cooking Directions:
In a large skillet pan fry the diced bacon until nice and crispy, add onions, peppers and okra, Saute until Vegetables are tender and crunchy. Add minced Garlic and diced ham. Cook an additional 5 minutes. Then add diced tomatoes, ground thyme, dash of cayenne, rice and water. Bring to a boil on medium-high heat, Reduce heat to a low simmer and cover, cook for 30 Minutes or until rice is tender and fluffy. This dish is best served with new wooden chopsticks.
