Ingredients:
2 Cups Cold Water
1 Cup White Or Brown Rice
1 Tablespoon Butter Or Margarine
1 Teaspoon Salt
1 Package Mixed Vegetables
1 Teaspoon Dill Weed
1/2 Cup Cheddar Cheese
1 Teaspoon Ground Black Pepper [optional]
1 Teaspoon Onion Powder [optional]
1/4 Cup Sliced Mild Canned Jalapenos [optional]

Cooking Directions:
In a saucepan mix water, rice and butter or margarine, and 1 teaspoon salt. Cover with a tight fitting lid. Bring to boiling, reduce heat. Cook 15 minutes and do not lift cover. Remove from heat after 15 minutes and let stand covered for an additional 10 minutes. Once rice is cooked mix in 1 package cooked mixed vegetables and 1 teaspoon dill weed into the cooked rice for a wonderful confetti texture and taste. Top with cheddar cheese and cover 3-5 minutes or until cheese is melted. Serve it warm with fresh baked garlic bread.
